About This Wine:
Once hand picked, the grapes are left on racks for fifty to sixty days for “appassimento” and “surmaturazione.” These processes allow the sugars and flavors of the grapes to concentrate. After the stalks are removed, the wine begins to macerate and ferment for approximately twenty days. The pignolo then undergoes malolactic fermentation and matures for thirty-six months in new French oak barrels before bottling.

What Does It Taste Like?

Quantum is a powerfully rich and elegant wine. Dark cherries, tobacco, and cherries leap out of the glass as the aromas slowly evolve over time in the glass. Velvety and warm in the mouth, the noble tannin finish is a staple characteristic of the indigenous variety.
